Holiday inspired truffle & pesto crostini

As summer draws firmly to an end, I thought I’d share a snippet from my holiday with friends in Italy and a couple of recipes. We spent a luscious week in the rolling hills of tuscany which really is a food lovers dream! What’s particularly amazing is the quality of the raw ingredients…the juicy tomatoes, creamy mozzarella and thick cut meats…mmm! It means you can do very simple things a these ingredients really do all the hard work for you!

Tomato & Mozzarella Bruschetta
Fresh loaf of bread – preferably sourdough or ciabatta – toasted
High quality buffalo mozzarella
Fresh basil leaves
Tomatoes – cut into cubes an mixed with olive oil and balsamic vinegar

Truffle on Toast
Fresh loaf of bread – preferably sourdough or ciabatta – toasted
Truffle paste
Fresh basil leaves
Pine nuts

Antipasti Bowls
Really just an amalgamation of what we had lying around.
Breadsticks (I like the seeded ones)
Cured meats (either salami or serrano ham)
Fresh Basil Leaves
