Prawn & Avocado Crostinis

The full credit for this one goes to my dear friend Chloe, who despite her claims that she cannot cook, has the most hospitable heart I have ever seen and produced these bad boys when she hosted us a few weeks ago. We love you Chloe!

Ingredients – makes 20
Pack of Crostinis (or make you own by toasting ciabatta)
2 Little Gem Lettuces
2 Avocados
1 pack of cooked prawns (I like ones with a spicy marinade)
Lemon juice
Olive oil
Chilli flakes


  1. Toast the crostini until they are warm
  2. Smash 1 avocado with a little olive oil to a chunky spread and apply to the crostini
  3. Place a leaf from the gem lettuce on each crostini
  4. Slice the avocado into thin slices (around half a cm thick) and place on top of the lettuce
  5. Add a prawn on each canapé
  6. Mix a dash of olive oil in the lemon juice and add a dash over each canapé
  7. Sprinkle chilli flakes over the canapés to finish
