Sweet Potato & Avocado Bites

Ingredients – makes 20

4 Sweet Potatoes (small and relatively evenly rounded)
Avocado Lime
Cherry/plum tomatoes
Olive oil
Cumin
Paprika
Salt
Pepper

Method

1) Preheat the oven to 180 degrees centigrade (160 in fan oven)
2) Slice the sweet potatoes so you have bases around 1cm thick
3) Put them on a baking tray and season with olive oil, cumin, paprika, salt, pepper
4) Put in the oven for 10-15mins or until nicely roasted
5) Meanwhile remove the skin of the avocado and mash in a bowl with juice from the lime, salt & pepper until you get a chunky paste
6) When the sweet potato bases are cooked put a dollop of the avocado mixture on top of each one 7) Garnish with a slice of a cherry/plum tomato

Presentation tip These look really smart presented in lines on a rectangular/square white or slate platter
